P 500 operating temperature

I'm afraid in my radiator fan and want to add a temperature sensor to the radiator. Does anyone know what the temperature should be?

My 2011 big red 700 operates at about 200 F at idle when measured with an IR thermometer at the water line connection on top of the engine. The fan kicked on at 206 to cool it back down to the 200 range. I found little info on the operating temp and wrote this thread to Share what I’d learned.
