I wanted to smoke one this year, but family gatherings will not allow that to happen. :(

So.. Are you frying a turkey?
Let's see what you got.
Bonus points for a pic of your fryer/turkey AND your Pioneer!

Cracker Barrel for us. Two breast and the fixings. Wife needed a break and it's really good.

A 20 lb turkey in the oven and a 12 lb turkey on the smoker. Thanksgiving is still the holiday everyone attends at the family farm. Now that it is my wife and I living there it is up to us to do the main preparation for the feast.

What is the general rule for temp & time to smoke a whole turkey?
16lb about 6hrs @ 240 degrees. A little higher temp helps the skin stay a little crispier. 165 degrees in the thickest part, generally the breast. A good thermometer is your best friend. I spatchcocked it first. Cooks quicker that way. A smaller turkey is better for smoking.
